The Morocco Kit is a warmly spiced journey through one of the world's most hospitable food cultures. Slow-braised tagine, smoky roasted vegetable salads, and a table perfumed with cinnamon and orange blossom. This is a menu built around the Moroccan table itself: generous, unhurried, and designed to be shared from dishes set at the center for everyone to reach.
What's in the Kit
The Core Four – a complete meal for groups of 4-6:
- Chicken Tagine with Preserved Lemon & Olives – the anchor dish; slow-braised chicken in a warmly spiced sauce with briny olives and bright preserved lemon.
- Zaalouk – a smoky, garlicky roasted eggplant and tomato salad, served with crusty bread for scooping.
- Couscous with Herb Butter – light, fluffy couscous finished with a brown herb butter, the perfect base for the tagine's sauce.
- Moroccan Rice Pudding (Roz Bil Hlib) – silky rice pudding perfumed with orange blossom water and cinnamon, finished with almonds and pomegranate.

Why This Menu Works
Every recipe was chosen to work together as a cohesive spread, not just a collection of dishes. Warm spices (cumin, cinnamon, ginger, paprika) run through nearly every course, and orange blossom water threads its way from the rice pudding to the orange salad, tying the meal together aromatically from start to finish. The whole menu is built around the Moroccan tradition of small shared dishes set at the center of the table before the main course arrives, an act of hospitality in itself.

None of these recipes require special equipment - a Dutch oven stands in beautifully for a tagine - just good spices, fresh herbs, and a little patience for the slow braises.
